It is earthy, slightly tangy, warm with something that no factory process can replicate. At our Terrigal bakery, that moment happens every single morning — and it is one we never take for granted.
Sourdough has had something of a cultural comeback over the past decade, but for artisan bakers, it never went anywhere. The slow, careful craft of wild fermentation has been central to bread-making for thousands of years. What we do at our bakery is simply honour that tradition, while serving the beautiful community of Terrigal and the broader Central Coast of NSW.
In this post, we want to walk you through what real sourdough actually is, why the process matters, and why there is genuinely no shortcut worth taking.
What Makes Sourdough Different?
Most commercially produced bread is leavened using commercial yeast — a fast, predictable, and industrially convenient ingredient that does its job quickly and efficiently. Sourdough is different. It relies on a live culture of wild yeast and naturally occurring bacteria, often referred to as a ‘starter’ or ‘mother dough.’
This starter is fed and maintained over time — ours has been alive and active for years. When added to a dough, it ferments slowly over many hours, producing carbon dioxide that makes the bread rise while also developing complex acids that give sourdough its characteristic tang and depth of flavour.
The fermentation process also partially breaks down gluten and phytic acid, making the bread easier to digest and increasing the bioavailability of key nutrients. It is not just a flavour thing — real sourdough is genuinely better for your gut.
The Process Behind Every Loaf
At our Terrigal bakery, every sourdough loaf starts with flour, water, salt, and our starter culture — nothing else. We mix our doughs the evening before baking, allow them to ferment overnight at a carefully managed temperature, then shape them by hand and proof them again before loading them into our stone deck oven.
Stone baking is essential. The thermal mass of a stone deck oven absorbs and radiates heat in a way that creates the thick, crackly crust and open crumb structure that sourdough is known for. Steam injection in the first minutes of baking keeps the surface supple long enough for the loaf to expand fully before the crust sets.
The entire process, from mixing to the finished loaf, takes between 18 and 24 hours. That is not inefficiency — that is exactly how long good bread takes.

Our Sourdough Range
We bake a rotating selection of sourdough varieties throughout the week, from our classic white country loaf to whole wheat, rye, and seasonal flavour additions like roasted garlic and rosemary or dark olive. Each variety uses the same slow-ferment process — only the flour blend and additions change.
